See this picture? My kids ate this on spinach for lunch. It took me less than 10 minutes to make which was fortunate because they were so hungry I thought they might start eating the furniture. Salad, I love you!
Salad is the poster child for boring healthy food but it doesn’t have to be. If you are making salad at home, you can top it with just about anything! I just love it. To keep it different enough that my family is willing to eat it often, I do what I call a rotating salad bar. I have this handy appetizer tray and I just fill it with what I have on hand for the day. At the table, everyone gets their base greens and then can fill up on toppings from the salad bar. I rotate out the toppings and dressings so it is like a different dish every time.
Here are some example salads with a list of toppings/dressings that would go well with it. You can mix and match what you have on hand. Use whatever greens you like. We usually used mixed baby lettuce and spinach but there are all sorts of deliciousness to choose from.
Southwestern Salad (pictured)
Greek Salad (this is good with or without lettuce)
-cubbed feta cheese
-vinaigrette with Greek spices
Your salads do not have to have some kind of theme, just experiment! Try produce in season. Or start with a dressing that you love like the Orange Dijon Dressing and think of what would pair well with it.
